Born in Dallas, Sandi was 12 when her family moved to Scottsdale, AZ. After high school graduation she married her high school sweetheart, and they moved to Virginia when he enlisted in the Navy. While there, she worked for AT&T and quickly rose to a supervisor position.

In 2001 Sandi met her husband Richard, a professor at the University of Arizona College of Architecture. He retired in 2002 they were married in 2004, and moved to Prescott, Arizona, while also keeping a vacation home in San Marcos, California, which had a small art studio.

The Ebeltofts moved to PebbleCreek in 2018, and both joined the PebbleCreek Art Club. At the Creative Arts Center Sandi learned the art of acrylic pouring and finds the abstract and surprising unforeseen nature of pouring a delight. Ultimately they converted a second bedroom in their home to a studio, where both Sandi and Richard create their art.

Sandi's work is on display at the Creative Arts Center and at the reception desk in both clubhouses.
